French Toast

I've always thought French toast is a cross between eggy bread and bread and butter pudding. Which actually doesn't give it the credit it deserves, as it's a delicious breakfast treat for people young and old, especially amazing served with fresh fruit, jam or hazelnut chocolate spread. It's also the best way to use up slightly stale bread. 

Ingredients
(for approx 8 slices)

3 large eggs
40g caster sugar
1 tsp vanilla extract
100ml fresh milk
40ml double cream
Some icing sugar to decorate.
8 slides of any kind of bread. 

Method

Whisk the eggs and sugar together then add the vanilla.
Mix the cream and milk together and add to the egg mix. Whisk well to form a batter.
Place the slices of bread spread out in a shallow dish and pour the batter mix over (you may need to do this in two batches).
Leave to soak for a few minutes while you melt a knob of butter in a large frying pan over a medium heat. 
Fry each piece of bread until both sides are a golden brown. 
Dust with icing sugar and serve with just jam or fresh fruit, or maybe be a little more creative and go for maple syrup, chocolate sauce, yoghurt and granola or fruit puree.
